      <image:caption>Sugar Cookie Crust First, cream together coconut oil and brown sugar in a medium sized mixing bowl. Then add almond milk, vanilla and almond extracts, salt, and baking powder and mix.  Last, add all purpose or gluten-free flour and mix just until ingredients are fully incorporated. Moisten your fingers with water and press cookie dough into a pan-sprayed 9 x 11 glass baking dish or a 12 inch circular pizza shape.(If you have time, chill your cookie dough for about 10 minutes in the refrigerator to make it less sticky to work with.) Bake at 350 degrees for 15-18 minutes, then let the crust cool completely before adding toppings! Vegan Cream Cheese Filling Soften vegan cream cheese at room temperature for an hour or so (or 15-20 seconds in the microwave!) then combine with agave and vanilla extract.  Keep mixing with a fork until completely smooth.   Spread your cream cheese frosting on the cooled cookie crust and top with your favorite sliced fruit!</image:caption>

      <image:caption>Combine the flax and water in a large mixing bow to make the flax egg or use an egg substitute. Combine the flour, sugar, salt, baking powder, baking soda, and spices in another large bowl. To the flax egg add the soy milk, vinegar, vanilla, sweet potato, and oil and whisk well, until combined. Stir the wet ingredients into the dry ingredients until fully combined. Preheat a skillet and melt a couple tablespoons of coconut oil on the surface. Ladle some batter onto the skillet (about ½ cup), and fill with as many pancakes as you can comfortably fit. Cook on each side on medium-low heat for about 3 minutes. Flip when the center starts to bubble. Place cooked pancakes onto a clean plate which you can keep warm in the oven at its lowest setting. Complete with the remaining batter. To serve top the pancakes with maple syrup, vegan tempeh bacon, toasted coconut, nuts or seeds.</image:caption>

      <image:title>Food - Grandpa Diggs Sticky Buns - Cooking Instructions</image:title>
      <image:caption>Dough In a microwaveable bowl heat the almond milk and 1 Tbsp brown sugar until warm making sure not to boil it. Remove from the microwave and let it cool to 110 degrees F (43 C). If it is too hot it will kill the yeast. Sprinkle the yeast on top of the milk and sugar mixture. Wait for about 10 minutes for the yeast to activate (you should smell an earthy smell that will let you know it is active). Then pour it into a mixing bowl and stir in the melted vegan butter, salt, and vanilla. Next add in flour 1/2 cup at a time, mixing as you go (you may not use all the flour). Also add in the 1/4 tsp of nutmeg and 1/2 tsp of cinnamon into the dough mixture. The dough will be sticky and when it is too thick to stir, place flour on the counter and your hands and knead the dough for around 5-7 minutes. (If you have a bread attachment you can use this to knead the dough). Be careful not to over-knead the dough as it will make the dough tough. Clean out the mixing bowl, coat it with coconut or olive oil, and add your dough ball back in. Cover with plastic wrap and set in a warm place to rise for about 1 hour, or until doubled in size Filling Sprinkle flour on your rolling surface and roll the dough into a thin rectangle (the thickness of the dough should be about 1/4-inch). Brush the dough with softened vegan butter. Mix the sugar, cinnamon, and nutmeg in a small bowl. (Optional to add in your favorite nuts). Sprinkle this mixture evenly over the dough. Starting at one end, tightly roll up the dough. Then with a serrated knife or a string of floss, cut the dough into 1.5 – 2 inch sections and place in a well-buttered 8×8-inch square or comparable sized round pan (you should have about 10 cinnamon rolls).  Brush some melted butter on top of the rolls and cover with plastic wrap to allow for the rolls to continue to rise which should talk about an hour. (Sometimes I allow the cinnamon rolls to rise overnight for the best results) Once the cinnamon rolls have risen. Place them in the pre-heated oven at 350 degrees F for 25-30 minutes until they are almost golden bring. Remove from the oven and let cool and serve warm. (For more doughy cinnamon rolls cook for closer to 20-25 minutes and for more well-cooked cinnamon rolls cook for ~30 minutes.) Icing Mix together the powdered sugar, vanilla, almond milk, and cinnamon until all lumps are removed. Warm in the microwave slightly if lumps remain or if you would like thinner icing you can also add more milk.</image:caption>

      <image:caption>Warm the water in a small bowl and add the brown sugar. When the water is at 110 degrees F sprinkle the yeast over the water and let it activate (around 5 to 10 minutes) In a mixing bowl stir together the flour, salt, chives, basil, oregano, rosemary, and garlic. Add in the activated yeast and olive oil. Knead the bread for at least 5 minutes to fully activate the yeast but be careful not to overwork the dough. Take the dough out of the bowl and clean out the mixing bowl. Lightly oil the mixing bowl and place the dough back into the mixing bowl. Place plastic wrap on top of the bowl and let the dough rise for about an hour. It should almost double in size. Create 1-inch balls and place them side by side in an 8x8 greased pan and cover the assembled balls with plastic wrap. Let the dough continue to rise for another 30-60 minutes Preheat the oven to 375 degrees F. Melt the vegan butter and brush over the top of the knots and sprinkle the minced garlic and flaky sea salt over them. Bake for 20 to 25 minutes until golden brown. Remove them from the oven and serve warm with the pasta of your choice or by themselves!</image:caption>

Add the oat mixture to the dish. Add oat milk, chopped apples, and remaining agave or maple syrup and mix together. Sprinkle brown sugar, cinnamon and chopped nuts on the oatmeal. Bake for 30 to 35 mins or until golden on the edges and the center is not sticky and springs back when pressed.
